Self Serve Gazpacho
There is no better soup in the summer when tomatoes are at their best than Gazpacho. I love to serve it from a pitcher so family or guests at a party can serve themselves. It also looks much nicer than a huge bowl of cold soup! Below is my favorite recipe.
2 pounds of ripe tomatoes cut into chunks or 2 pounds of canned San Marzano tomatoes
1 red or green pepper cut into chunks
1 cucumber peeled and chunked
1 small sweet onion cut into chunks
2 garlic cloves
2 t sherry vinegar or more to taste
1 t salt
1/2 C good quality olive oil
Put all of the ingredients in a blender and blend adding olive oil at the end. Garnish with fresh basil and a drizzle of olive oil. You can also garnish with a fresh tomatoes and cucumber. Salt and pepper to taste. Chill for a few hours for best results before serving.
