My Favorite Tomato Basil Soup
My family loves this soup recipe not only for the soup but as a dipping sauce for their grilled cheese sandwiches, which are a must side with this soup!
Tomato Basil Soup:
Ingredients:
3 tablespoons good olive oil
2 yellow onions, chopped
3 cloves of minced garlic
4 cups beef stock
1 (28-ounce) can crushed tomatoes, preferably San Marzano
1/4 Cup Fresh Basil
Kosher salt and freshly ground black pepper
1/2 cup orzo (I put this on the side and let people add if they want)
1/2 cup heavy cream
Now Let’s Make It:
Heat the olive oil in a stock pot, add onions and cook for 5 minutes then add garlic and cook for 1 minute
Add tomatoes and basil and cook for 5 minutes
Add beef stock or chicken stock if you prefer
Let simmer for 30 minutes then put in blender
Add salt and pepper and cream (the recipe is still great without cream if you want a healthier version)
Cook orzo, I usually do this in chicken stock and add to soup
Serve with grilled cheese sandwiches!
