Easy Cod Baked in Foil Packets
If the thought of making fish seems a little fishy to you this recipe will change your mind. The only way you can mess this recipe up is by overcooking the fish. Cod is a very forgiving fish, don’t feel obligated to follow an exact recipe. Use your favorite spices and herbs and the cod will be melt in your mouth delicious!
Ingredients:
Fresh Cod, I get once piece for each family member
4 Tablespoons of Olive oil
8 Tablespoons White Wine
1 Lemon
1 Cup Fresh Basil
4 Tablespoons of butter
4 cloves of garlic
Salt and Pepper
2 Cups Spinach
2 Cups Cherry Tomatoes
Aluminum foil
Now Let’s make it:
I prefer seasoning each piece and foil packet separetely so begin with making 4 pieces of foil with a piece of cod on each. If your cod is bigger you can overlap 2 pieces.
Salt and pepper your cod and place on aluminum foil
Drizzle the cod with olive oil
Add 1 handful of spinach 1 handful of cherry tomatoes and 1/4 C fresh basil to each packet.
Sprinkle with olive oil, white wine, salt and pepper and a squeeze of lemon.
Top each piece with 1 Tablespoon of Butter
Close foil packet and put on a sheet pan
Bake at 450 degrees for 8- 15 minutes or until internal temp is 145 degrees. It should be flakey.
