Fall Salad with Maple Balsamic Vinaigrette
I love a fall salad. This salad is one that you can add any of your favorite ingredients and the dressing will steal the show. I start with a base of arugula and spinach and add apples, roasted brussel sprouts, roasted cauliflower, walnuts, and goat cheese. You can also add sweet potatoes or any roasted vegetables that you love. If you want to skip a step grab the roasted vegetables from the salad bar at Whole Foods.
Maple Balsamic Vinaigrette
Ingredients:
1/2 cup balsamic vinegar
1/4 cup maple syrup
1 cup olive oil
2 teaspoons dijon mustard
salt and pepper to taste
1 shallot chopped (optional)
Now let’s make it:
Add all ingredients into a blender. Blend until smooth. Drizzle over salad.
