My Super Secret Meatballs
Before you scroll down and see all of the ingredients in my homemade meatballs, know this…. they are the best. Yes, some recipes that are show stoppers simply take time and effort. This recipe is not hard at all. Work with me here… take the time, make the meatballs, and you will be elevated to a new level in your house. Promise!
On my low carb days I roast a spaghetti squash and serve on top of the squash.
If you can’t bear to make the meatballs and the sauce, you can use your favorite jar of pasta sauce, but if you are going to make it, why not just go all in? I love this plain and simple tomato sauce found in an earlier blog post.
Meatball Recipe
Ingredients:
2 1/4 Cup Panko Bread Crumbs
1 1/2 Cup Buttermilk
3 T Water
1 1/2 teaspoons unflavored gelatin
2 pounds ground chuck
1 pound ground pork
6 ounces thinly sliced prosciutto (chopped fine)
3 large eggs
3 garlic cloves minced
1 Cup freshly grated parmesan cheese (do more if you want to put on top of pasta)
1 1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons Worcestershire sauce
1 teaspoon onion powder
3 Tablespoons Fresh Parsley
Pam or cooking spray to spray wire rack
Let’s Make It:
Preheat oven to 425 degrees
Add the gelatin to 3 Tablespoons of water and let it sit for 2 minutes
Combine panko bread crumbs, buttermilk, eggs, garlic, salt, pepper, Worcestershire sauce, onion powder, and parsley
Add the gelatin mixture to panko mixture and mix
Mix all of the meats in a large bowl
Add the panko mixture to meat mixture
Spray a wire cooling rack and place on top of a sheet pan
Form the meatballs and place on the wire rack
Cook for 10 minutes then turn the pan in the oven, cooking for another 10 minutes for a total of 20 minutes until lightly brown on top.
I prefer then moving them into a tomato sauce and cooking for another 30 minutes on very low heat, but if you want to eat it immediately you should make sure they are done or cook another 5-10 minutes. These are also great for meatball sandwiches!
