One Pan Monday- Pork Tenderloin
My least favorite part about making dinner is the clean up. This tenderloin on a sheet pan takes about as long to put together as to clean up! Throw your favorite vegetables on a sheet pan and top with pork tenderloin then add the super secret sauce The vegetables bake in the juices of the tenderloin giving them extra flavor. Make this easy win win recipe once and you will add it to your Mundane Monday list!
Ingredients:
1 1/2 - 2 pound Pork Tenderloin
1/3 C brown sugar
2 tsp garlic powder plus more for a sprinkle on vegetables
2 T soy sauce
2 T balsamic vinegar
1/4 tsp smoked paprika plus more for a sprinkle on vegetables
Baby potatoes, carrots, asparagus, cherry tomatoes any other favorite vegetables
Olive oil
Salt and Pepper
Let’s Make It:
Preheat oven to 425 degrees
Mix the brown sugar, garlic powder, soy sauce, balsamic vinegar, and smoked paprika in a measuring cup.
Put your favorite vegetables on the sheet pan and SPRINKLE with olive oil, salt, pepper, garlic powder and smoked paprika.
Put the pork tenderloin on top of the vegetables and pour the sauce over.
Bake for 25-30 minutes or until internal temp is 145 degrees and juices run clear. I put on broil for the last 5 minutes (make sure not to burn).
If your potatoes need a little longer take your meat off at 145 and put veggies back in for a few minutes.
