Perfect Slow Cooker Pulled Chicken
The best part about slow cooking a huge pot of chicken is you can use it in many different recipes, or eat it by itself. Slow cooking chicken breasts creates a perfectly seasoned base to chicken salad, chicken tacos, BBQ chicken sliders, chicken noodle soup and many others!
The secret ingredient in this recipe is BUTTER. Chicken breasts do not have as much fat as chicken thighs so they often get dry in the slow cooker. Adding butter makes the breasts tender and tasty!
Slow Cooker Pulled Chicken:
Ingredients: (I usually double this recipe to have plenty of chicken leftover)
4 chicken breasts
4-5 Tablespoons of butter
1 teaspoon onion powder
1 teaspoon smoked paprika
4 cloves garlic
salt and pepper to taste
1-2 cups of good quality chicken stock (enough to just cover the chicken breasts) ** for a different flavor you can substitute with coconut milk
If you like a smoky flavor you can add a teaspoon of liquid smoke
Cook on high for around 5-6 hours or low for 8 hours, until the meat easily shreds. I check it with a fork after around 5 hours and continue to check until it is finished. It really depends on how many breasts you have in the slow cooker for cooking time.
