Create your own Naan Flatbread- Mediterranean Night
A healthy dinner option for your family or guests is Mediterranean food. Make your own flatbread with mediterranean foods such as hummus, tzatziki, baba ganoush, cucumber, artichoke, feta, olives, grilled chicken, and anything else your family might enjoy. Add a side of pearl shaped couscous cooked in chicken broth and a dash of olive oil and you have an easy dinner that will make you feel like you traveled across the pond!
Baba Ganoush Recipe:
1 eggplant
olive oil
2T Tahini
1T fresh lemon juice
1t smoked paprika
Cut eggplant into 1/4 inch slices and sprinkle with salt. Let set for 10 minutes then wipe off moisture.
Sprinkle with olive oil and kosher salt
Broil eggplant slices in oven for 4 minutes on each side until golden brown
Let cool then peel off skin from slices
Put in food processor with other ingredients. Add salt if needed. You can also sprinkle with parsley, dill or any other fresh herb you enjoy. Serve with grilled Naan
