Vodka Sauce
Vodka Sauce Recipe
Ingredients:
1/4 cup olive oil
1 Tablespoon minced garlic
1 teaspoon hot sauce
1/3 cup fresh basil
3/4 cup vodka
2 28 ounce cans whole peeled tomatoes drained
Kosher Salt
1 cup heavy cream
1/2 cup freshly grated parmesan cheese
Pasta of your choice, you can use penne or a thin flat pasta such as Tagliarelle
Now let’s make it:
Heat the oil in a dutch oven. Add the onions and cook for 5 minutes. Add the garlic, basil and a dash of hot sauce and cook for one minute
Add the vodka and simmer for 7 minutes until the mixture is reduced by half.
Crush each tomato in the pot add 2 teaspoons of salt. Let simmer on low for as long as you can but at least an hour.
Pour the tomato mixture in a blender or food processor and blend. Return the mixture to the pot and add cream. Simmer on low for 10 minutes.
Boil pasta in salt water.
Add pasta to vodka sauce. Stir in 1/2 cup of parmesan cheese. Garnish with the remaining cheese.
